Chai Latte

Ingredients
1/2 cup water // 1 cinnamon stick // 1 vanilla bean, split // 3 cardamom pods, crushed // 3 cloves // a small slice of fresh ginger //2 black peppercorns // 1 assam tea bag // 1 cup almond milk // agave

Boil water and spices, then let simmer for five minutes. As this simmers, heat up almond milk, either in a saucepan or in a coffee frother.
Take the water off the heat and throw in a tea bag, let steep for 5 minutes. Remove the spices and tea then pour into a large mug. Stir in agave to taste, then top up with all of the frothed and hot almond milk. Dust with cinnamon, drink.
(careful, though, it's pretty hot)



As a special treat to you, though, I realise many of us don't have all these spices just lying around, so I have a quick method!

Ingredients:
1 cup almond milk // 1/4 tsp ground cinnamon // 1/4 tsp ground ginger // pinch of clove powder // 1/8 tsp nutmeg powder // splash of vanilla // 1 assam tea bag // agave

Boil the first 6 ingredients, then remove from heat, steep with an assam tea bag. Remove the tea bag after three minutes then flavour with agave and drink!
